The vinification takes place with a fermentative maceration of about 15 days at a temperature of 26°C. A post-fermentative maceration of about 5 days is carried out. Repeated pumping over and dèlestage ensure good extraction of the aromatic and colouring components. The wine follows its evolution in steel, at a controlled temperature.
